PURATOS INDIA BLENDS HEALTH WITH GREAT TASTE
A perfect vacationer’s delicacy of crunchy home made cookies, smeared with layers of choicest ice cream. Ice Cream Sandwich for the young at heart with the goodness of pineapple and nutty praline is an easy and yummy recipe and sure to be loved by all.
Yields: 12 ice cream sandwiches
Prep Time: 20 minutes
2 dozen of choicest cookies
700 ml fresh pineapple ice cream
Add-ons of your choice (sprinkles, chopped nuts, mini chocolate chips, etc.)
For the cookies – Crunchy chocolate chip cookies recipe
1 cup brown sugar
1 cup icing sugar
200 gms butter
2 teaspoon vanilla essence
3 cups refined flour – maida
1 teaspoon baking powder
1/4 teaspoon salt
250 gms chocolate chunks / chips – readymade available also
Preheat oven to 375 degrees. Mix/cream butter and sugar by hand until creamy. Add eggs and vanilla essence. In a separate bowl, mix dry ingredients. Gradually add dry ingredients to butter mixture. Add chocolate chunks. Drop with a tablespoon onto ungreased cookie sheet. Bake 11 minutes. Bake till crisp. Cool at room temperature.
Assembling the sandwich ice cream:
1. With a heavy spoon , whip the ice cream to a soft consistency .
2. Turn one cookie over and spread a thick ice cream layer on it. Immediately cover the ice cream layer with the other cookie, sandwiching the ice cream between the cookies.
3. Press the cookies together gently to push the ice cream to the edges.
4. Roll the edges in sprinkles, chocolate chips or nuts. Eat immediately or wrap in plastic wrap and place in freezer to eat later.
